Parmesan Potato Casserole

Title: PARMESAN POTATO CASSEROLE

Yield: 12 Servings

12 Med. potatoes, peeled and
-quartered
1/2 c Butter
1 c Milk
3 lg Eggs, lightly beaten
1/2 c Grated Parmesan
1/4 c Chopped parsley
1 ts Salt
1/2 ts Pepper

Heat oven to 350 degrees. Lightly grease a shallow 3 qt. baking
dish.

Cook potatoes in water to cover 15-20 min. until tender. Drain well
and return potatoes to pot.

Add butter to potatoes and mash until butter melts. Add milk, eggs,
cheese, parsley, salt and pepper and mash until smooth. Spoon into
prepared dish.
At this point, it can be refrigerated. Bring to room temp. before
baking.

Bake uncovered 45-50 minutes until puffed and golden.

Makes about 12 servings. Per serving: 204 cal, 6 g pro, 22 g car,
11 g fat, 357 mg sod. Happy Charring
