Nicely Spiced Pork Loin

Title: NICELY SPICED PORK LOIN

4 Cloves garlic, minced
1 ts Salt
2 tb Vegetable oil
2 tb Lemon juice
1 tb Paprika
2 ts Each ground cumin and
-coriander
1 ts Ginger
1/4 ts Cinnamon
1 Boneless pork loin roast
(about 4 lb.)
In bowl, mash garlic with salt; mix in oil, lemon juice, paprika,
cumin, coriander, ginger and cinnamon.
Cut 1 inch deep slits all over top and sides of pork; rub paste all
over roast. Roast on roasting rack in pan in 325øF oven for about 1
hour and 45 minutes or until meat thermometer registers 160øF.
Transfer to platter and tent with foil. Let stand for 10 minutes
before carving. Makes 8 servings. Typed in MMFormat by
