      3    Eggs
  2 1/2 c  Sugar
      1 c  Oil
      1 ts Vanilla
      2 c  Flour (plain)
      2 c  Grated zuckinni
      3 ts Cinnamon
      1 ts Salt
      1 ts Soda
      1 ts Baking powder
      1 c  Nuts (Optional)
 
  Beat eggs well, add oil and vinegar.  Then add flour, zuckinni, soda
  and powder. Bake at 325 degrees for 60 minutes. NOTE: If you use self
  rising flour omit salt, soda and baking powder. Variations: Use
  dates. Allspice instead of cinnamon.
