Garlicky Baked Shrimp

      Title: GARLICKY BAKED SHRIMP

      Yield: 4 Servings
 
           Vegetable Cooking Spray
  1 1/4 lb Shrimp; medium, peeled
           -deveined
    1/2 c  Bread Crumbs;dry
      3 tb Parsley; finely chopped
      1 ts Lemon Rind; grated
    1/4 ts Salt
      3    Garlic cloves; minced
      2 tb Fresh Lemon Juice
      4 ts Olive Oil
 
    Coat 4 individual gratin dishes with cooking spray. Divide shrimp
  evenly among dishes; set aside.
    Combine the breadcrumbs, parsley, lemon rind, salt, and garlic in a
  bowl; stir in lemon juice and oil. Sprinkle the breadcrumb mixture
  evenly over shrimp. Place dishes on a baking sheet. Bake at 400F
  degrees for 13 minutes or until shrimp are done and breadcrumbs are
  lightly browned.
