Stuffed Plantains

Title: STUFFED PLANTAINS

3 Ripe plantains
2 tb Butter
2 tb Cornstarch
1/4 lb Cheddar cheese, shredded

Salt and pepper to taste

A plantain is similar to a banana.

Bring a quart of salted water to boil in a large saucepan. Add
plantains that have been cut in half, and the ends chopped off. boil
for 20 minutes. Drain, peel, and mash together with butter and
cornstarch. Allow to cool slightly. Heat deep frying oil to 375
degrees (F.). Coat the palm of your hand with a little cornstarch and
spread some mix on it, forming a nest in the center. Place some of
the shredded cheese in the middle and shape into balls. Deep fry
until golden brown.
